Kate’s Cookie Jar: All Natural, Sugar Free Sweet Treats by Merryn Jose
Alicia O’Connell-Cohen was introduced to me by my Jin Shin Jyutsu practioner, Mitzi Adams.
My meeting with Alicia was a well fated event because of my own allergies to white flour and sugar. Alicia has an interesting story of how she became a baker eliminating these products and using only natural ingredients.
She very kindly sent me samples of her cookies, and I was thrilled at how delicious they were. They ranged from pumpkin and banana muffins to chocolate chip cookies and a whole myriad of other goodies.
Her story of how she came to become a baker is written below, so if anyone suffers from the same allergies as myself to certain products, I highly recommend Alicia’s home baked cookies.
All her information on ordering them will be listed below the article.
“I suffered from the pain of major digestion problems from the time I was 13. I wasn’t correctly diagnosed with Crohn’s disease until I was 18, only after doctors said I had anorexia and had removed my appendix. I was on every medication, still felt lousy and was in and out of hospitals for nearly 30 years until a friend I respected told me about Jed Schwartz (a Jin Shin Jytsu provider). Jed sent me to a nutritionist named Alice who changed my diet and my life. I gave up sugar, white flour, almost all dairy (I still use butter), caffeine and redmeat. I also gave up ALL medication including over the counter products, even Tylenol”
“Just prior to this, my young daughter, Kate, had an emergency surgery for septic hip. Kate was on high dosages of antibiotics, both intravenous and oral, for months. Her immune system disappeared and she had Candida along with mood swings, depression and learning difficulties. Alice took one look at Kate and put her on my diet. Kate had a real hard time giving up sugar outside of my home so the crying jags and mood swings continued on and off. One day Kate asked if we could bake Christmas cookies, she had gathered some recipes she was dying to make. I explained once again that we couldn’t have sugar and she suggested we try to make some with the brown rice syrup I had in the kitchen. I must have been in a good mood because baking was not my thing at the time. We had to experiment quite a bit before we arrived at a truly delicious and healthy cookie. To see my daughter so happy was truly a holiday present!”
“When I realized I could make other people’s lives a bit sweeter I decided to start my own company selling healthy, sugar free baked goods without the use of white flour and artificial flavorings.”
